Tropical Cranberry Sauce


24 Ounces of Cranberries
2 juice Oranges
2 Table Spoons of Raw Honey
1 Cup of Pineapple
1/2 Cup of Fresh Coconut
1/2 Cup of Walnuts

Blend Coconut in Food Processor
Add Walnuts and blend
Add Oranges, Pineapple and Cranberries and blend
Add Raw Honey and blend
Add more Honey if you would like it sweeter

Holiday Smoothie

A friend of mine has been asking me to come out with a green smoothie.  I make some kind of smoothie every day and decided that this one would be something that not only tastes great and is a little bit different but also goes with the upcoming holidays.

3 Raw Eggs
Scoop of Vanilla Protein Powder
Handful of Spinach
1/2 Cup of Pineapple
1/2 Cup of Cranberries
1 Tablespoon of Raw Honey
1 Teaspoon Cinnamon

Chicken With Oranges And Pineapple

 

3 chicken Breasts
3 Juice Oranges
1/2 Onion
1.5 teaspoons of Basil
1 teaspoon Black Pepper
1 Teaspoons Cinnamon
1 Cup Fresh Pineapple

2 tablespoons of Coconut Oil

Put frying pan on medium heat.
Add Coconut Oil
Cut up Onion
Add Onion to pan
Cut up Pineapple
Cut Chicken into bite size pieces
Remove skin from oranges
Put chicken in the pan
Cover with Cinnamon, Black Pepper and Basil
Squeeze oranges over chicken
Tear the oranges up and
Place the rest of the oranges in pan with chicken
Add the Pineapple
Stir once in a while
Cook for 15 minutes or until done

Fruit And Nut Bar

1 Cup Almonds
1 Cup Sunflower Seeds
2 Tablespoons Ground Flax Seed
1 Cup Pumpkin Seeds
1 Cup Fresh Coconut
1 Cup Old Fashioned Rolled Oats
1/2 Cup Goji Berries
1.5 Cups Dates
1.5 Cups Apricots
3 Tablespoons Raw Honey
1 Tablespoon Cinnamon
1 Teaspoon Vanilla Extract
2 Eggs
1 Tablespoon Coconut Oil

Pre-heat oven to 300
Blend Almonds, Sunflower Seeds, Flax Seed, Pumpkin Seeds, Coconut, Oats, Goji Berries together.   Add Dates,
Apricots, Raw Honey, Cinnamon, Vanilla Extract, Eggs and blend until it is a paste.

Cover Baking Pan with Coconut Oil.  Add paste.  Place in oven.  Cook for 45 minutes.

Shrimp And Scallops With Tomato Sauce Over Spaghetti Squash

1 LB Scallops
1 LB Shrimp
2 Garlic Cloves
1 Large Onion
1 Tablespoon Olive Oil
6 Large Organic Tomatoes
1 Teaspoon Oregano
1 Teaspoon Cayenne Pepper
1 Teaspoon Paprika
1 Teaspoon Cumin
Fresh Ground Pepper as desired
1 Teaspoon Rosemary
3 Bay Leaves
2 Jalapeno’s
Spaghetti Squash

Heat frying pan on medium heat
Add Oil
Sauteed Onions, jalapeno and 1 Garlic Clove (cut up) in Olive Oil.
Add Shrimp and Scallops
Cook until Shrimp are pink.
Drain any water.

Heat Large Pot
Add Tomatoes to Food Processor and puree
Place Tomatoes in Pot
Add 1 Garlic Clove, Oregano, Paprika, Cumin, Fresh Pepper, Rosemary, Bay Leaves
Add Shrimp, Scallops, Onions, jalapeno and Garlic.
Cook until high simmer

Pre-heat Oven to 350
Poke holes all over Squash with fork
Put Spaghetti Squash in on a metal pan
Cook for 1 hour

Remove Squash and cut in half.  You may have to let it cool off
Remove Seeds and guts
Take a fork and scrap the insides of squash onto plate.
It will come out looking like spaghetti
Add Seafood Sauce

Almond Milk

 

Want to make your own Almond Milk?  Try out this recipe and keep the almond pulp so that you can use it for another recipe.

Almond Milk
1 Cup Almonds
4 Cups Distilled Water
2 Tablespoons Raw Honey
1 Teaspoon Vanilla Extract
1 Teaspoon Cinnamon

Soak almonds in water overnight.  Just enough water to cover almonds.
Drain water and wash off almonds
Remove skin from almonds.  You can just pinch it off.
Put almonds in blender with 4 cups of water.
Blend until smooth.  It will be a couple minutes.
Place Cheese Cloth over strainer and strainer over bowl.
Empty blender into strainer.
Cheese Cloth will trap almond pulp. (you can use pulp for other things)
Put almond milk into blender
Add Honey, Vanilla Extract and Cinnamon
Blend

Almond Coconut Honey Chicken

Almond Coconut Honey Chicken
Pre-heat oven to 400
4 Chicken Breasts – Cut them into bite size pieces
4 TBS of Raw Honey
1 TBS of Cinnamon

Take 1 Cup of Almonds blend them in a food processor.
Take 1 Cup of fresh coconut blend it into the almonds
Take chicken put in container and coat with Raw Honey and sprinkle Cinnamon over it. Mix it together to make sure that they are completely covered
Pour Almonds and Coconut over them and shake up.
spread chicken out in a metal tray. Take any left over almonds and coconut from other container and put on top of the chicken.
Cook for 20 to 25 minutes or until completely cooked at 400 in oven

Seared Tuna with Ginger and Mango

Pan seared on the outside and rare on the inside


8oz Yellow Fin Tuna
1 tablespoon Coconut Oil

1/2 A Lemon with no peal
1 Slice of Mango
1 teaspoon Ginger
1 tablespoon Raw Honey

Add Lemon, Mango, Ginger and Honey to food processor
Blend until it is mush

Pre Heat skillet on medium heat
Add Coconut Oil
Season Tuna with Pepper
Place Tuna on Skillet
Flip tuna after 1 Minute
Cook other side for 1 Minute

Remove Tuna and add Mush to the top of it.

Cut chicken into bite size pieces

Slice Sweet potatoes into thin slices
Pre-heat skillet on medium
add olive oil to skillet
add onions, garlic, sweet potatoes, Fennel, Asparagus, Tomatoes and cook for 10 minutes
Add chicken, grind desired amount of black pepper, add cumin. Cook for 15 minutes and stir frequently

Homemade Coconut Flavored Chocolate

If you think that you can’t have great tasting food while eating healthy this will prove that you are wrong.  I love being able to eat something that tastes so good that it can’t be good for you.  Check out some of the benefits that this recipe provides.  This was a recipe that really help me stay on track during my transformation.

1/2 cup of raw cacao

1/2 cup of Coconut Oil
2 Tablespoons of Raw Honey
1/2 teaspoon organic vanilla extract
1/2 cup almonds
Mix it up throughly
Place in the freezer for 10 minutes. Keep it in there long enough and you will have to cut it with a knife
I also sometimes put peanut butter on top of it and also sometimes add blueberries/raspberries/ whatever
