Chicken Field Green Salad With Cinnamon Honey Vinaigrette Dressing

2 Chicken Breasts
4 Cups Organic Field Greens
1/2 Cup Basil
1/2 Cup Walnuts
1 Large Carrot
1/2 Cup Dried Cranberries
8 ounces Cherry Tomatoes
1/4 Red Onion
Ground Pepper
2 Table Spoon Coconut Oil

Vinaigrette
2 Teaspoons Cinnamon
1.5 Tablespoons Raw Honey
1/4 Cup Blueberry Infused Balsamic Vinegar
1/2 Cup Extra Virgin Olive Oil

Place frying pan on medium heat.  Add Coconut Oil.  Slice chicken into bite size pieces.  Put chicken into frying pan.  Cook for 20 minutes turning frequently.

Place Field Greens into bowl.  Cut up Carrots and Onions.  Add carrots, Onions, Tomatoes, Cranberries, and Walnuts to Bowl.  Add Cooked Chicken to bowl.  Add Ground Pepper.

Vinaigrette – Combine Vinegar, Olive Oil, Honey and Cinnamon.  Mix up. Add to salad.

Homemade Coconut and Banana Chocolate

One of the first recipes that I posted was Coconut Flavored Chocolate.  I just made some additions to it which I usually do when I make the chocolate.  This is one of those things that will prove to people, that you can eat some great tasting food.  Food that if you didn’t know any better you would think it was unhealthy.  I’ve got a good friend who is a chocoholic.  He is in great shape but his eating habits aren’t so great.  He is very active and obviously has a high metabolism so he is able to keep the weight off.  Anyway, I told him to check out the chocolate recipe and now he is eating it all the time.  I am not telling you to replace all of your meals with this but still can have dessert.

1/2 cup of raw cacao
1/2 cup of Coconut Oil
2 Tablespoons of Raw Honey
1/2 teaspoon organic vanilla extract
1/2 cup walnuts
1 Banana
Mix it up thoroughly
Place in the freezer for 10 minutes. Keep it in there long enough and you will have to cut it with a knife

Healthy Chocolate Coconut Brownies

Chocolate Coconut BrownieNot only do these Brownies taste great but they contain no added sugar and are high in fiber.  They have a ton of healthy benefits.

1 Cup Almonds
1.5 Cups Fresh Coconut
1 Cup Pitted Dates
1 Cup Dried Apricots
4 Tablespoons Raw Honey
3 Eggs
1 Teaspoon Vanilla Extract
1/2 Cup Raw Cacao
2 Tablespoons Coconut Oil

Pre-heat Oven to 400
Blend Almonds
Add Coconut and Blend
Add Eggs, Dates, Apricots, Honey Vanilla Extract and Cacao and Blend
Coat Cooking Pan with Coconut Oil
Pour Mixture into Pan and Spread out Evenly
Put in Oven and Bake for 25 Minutes

Peanut Butter Coconut Sweet Potato Cookie

Blend Almonds into a powder.
Add Oatmeal, Bananas,  Honey, Almonds, Vanilla Extract
Blend
Take spoonfuls out and put on tray
Place in freezer for 3 hours

Sweet Potato Latkes (Pancakes) with Apple Sauce

2 Pounds Sweet Potatoes
4 Eggs
1 Cup Almonds
4 Tablespoons Raw Honey
2 Tablespoons Cinnamon
2 Tablespoons Coconut Oil

3 Apples
1 Teaspoon Cinnamon
1 Tablespoon Raw Honey

Heat Large Frying Pan on Medium
Add Coconut Oil
Shred Sweet Potatoes
Blend Almonds into a powder
Mix Sweet Potatoes, Almonds, Eggs, Cinnamon and Honey together

Take a spoonful of mixture and put it in the pan and flatten
Repeat process
After several minutes flip and cook other side
Add Coconut Oil as needed

Apple Sauce
Remove Cores
Cut up and place in food processor
Add Honey and Cinnamon
Blend

Add Sauce on top of pancakes or to the side

1/2 Pint Cherry Tomatoes
1/4 Red Onion
1 Jalapeno
3 Basil leaves
2 Cups Water

Add Water and Quinoa to small pot and bring to a boil.
Cook for 10 Minutes
Add Tomatoes, Onion, Jalapeno and Basil to food processor
Blend
Place Quinoa in bowl add mixture and mix

Dash of Cloves
Dash of Paprika
Dash of Cumin
1/4 cup of Vermouth
1 Tablespoon of Olive Oil

Put frying pan over a medium flame and add oil
Chop up Onions
Chop up Garlic
Sautee Onions and Garlic
Chop up Tomatoes
Add tomatoes to frying pan
Chop up Chicken Breasts
Add Chicken Breasts to frying pan
Squeeze Lemon over Chicken
Add Pepper
Add Cloves
Add Paprika
Add Cumin
Add Dry Vermouth
Cook for around 20 minutes and stir ocassionally

Serve alone or over Rice or Quinoa

Forbidden Rice with Orange and Tomato

I like to be creative and try some different things out.  Instead of just having plain rice as a side dish, I decided to make rice that had a little more flavor.  I also used Forbidden Rice which is a black rice.

1 Cup Forbidden Rice (You can use brown rice)
2 Cups of water
1 Orange
1 Tomato
1/2 Red Onion
1/2 Green Pepper
Several Leaves of Fresh Basil

Put water and rice in a pot
Cover and bring to a boil
Lower heat and cook for 30 minutes
Peel Orange and cut up into bite size pieces
Cut up Tomato into bite size pieces
Cut up Onion into small pieces
Cut up Pepper into small pieces
Cut up Basil
When rice is done remove from heat and strain any excess water
Add orange, tomato, onion, pepper and basil
