Chef’s Chocolate Salty Balls

chefs chocolate salty ballsMy training partner Chase was in South Park, Colorado and he met Chef.  He got his recipe for Chef’s Chocolate Salty Balls.  These things are awesome.

6 Tablespoons Natural Peanut Butter
5 Tablespoons Raw Honey
3/4 Cup of Oats
3 Tablespoons Ground Flax Seeds
2 Tablespoons Raw Cacao
1 Teaspoon Vanilla Extract
1 Teaspoon Sea Salt

Mix all of the ingredients together in a mixing bowl thoroughly.
Take spoonfuls out and roll into balls.
Place on cookie trey and leave in refrigerator for 1 hour or until you eat them

Healthy Coconut Cookie

1 1/2 Cup Fresh Coconut
1 Cup Pecans
1 Cup Dates (pitted)
4 Tablespoons Raw Honey
5 Tablespoons Coconut Oil
1 teaspoon Vanilla Extract
3 Eggs

Pre-Heat over to 350
Coat baking pan or cookie sheet with 1 tablespoon of Coconut Oil
Blend Coconut and Pecans in food processor
Add Dates and blend
Add Raw Honey, 4 Tablespoons Coconut Oil, Vanilla Extract and Eggs and blend thoroughly

Spoon out bite size pieces onto Cookie Sheet
Cook for 15 minutes.

The other option is to eat uncooked or freeze.  They are great either way but I think they are best uncooked.

Chicken and Artichoke Hearts

3 Chicken Breasts
2 Artichokes
1/2 Pint Cherry Tomatoes
1/2 Red Onion
3/4 Lemon
3 Garlic Cloves
2 Tablespoons Capers
Pepper to taste
Sea Salt to taste
1 Bay Leaf
3 Tablespoons Extra Virgin Olive Oil

Steam Artichokes with one Garlic Clove, 1/4 of a lemon and 1 bay leaf
Remove petals and scrap fuzzy stuff.  Cut up artichoke heart into small pieces

Put Frying pan over low flame
Add Olive Oil
Cut up Onion, Tomatoes, Garlic and Chicken
Add Onions, Tomatoes, Garlic and Artichoke to Pan
Add Chicken to Pan
Squeeze Lemon over Pan
Add Capers
Add Salt and Pepper
Stir frequently
Cook for 10 minutes or until chicken is cooked thoroughly

Raspberry Mango Chicken

Chicken Mango Rasp

3 Chicken Breasts
2 Tablespoons Coconut Oil
2 Tablespoons Cinnamon
1 Mango
3/4 Pint Raspberries
1/4 Lemon
2 Tablespoons Raw Honey
1 Teaspoon Vanilla Extract
6 Basil Leaves

Warm frying pan on low heat
Add Coconut Oil
Cut Chicken Breast into bite size pieces
Add Chicken to frying pan
Slightly increase heat
Add Cinnamon
Stir frequently
Put the following into food processor: Mango, Raspberries, Lemon, Raw Honey, Vanilla Extract, 4 Basil Leaves
Blend
After 10 minutes remove frying pan from heat (if the chicken is not fully cooked, keep it on until it is)
Add chicken to plate and pour some of the mixture in food processor over the chicken.  Tear up 2 Basil Leaves and add to Chicken

Sweet Apple Cider Vinegar Chicken

2 Chicken Breasts
1/2 Pint of Cherry Tomatoes
1/2 Medium Red Onion
1 Jalapeño
1 Garlic Clove
1 Teaspoon Rosemary
1 Teaspoon Black Pepper
Sea Salt to Taste
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Apple Cider Vinegar
2 Tablespoons Raw Honey

Heat Frying Pan on low to medium heat.  Add Olive Oil.
Crush Garlic.  Dice Onions, Tomatoes, Jalapeno. Slice Chicken into bite size pieces.
Add Garlic and Onions to frying pan.  After 5 minutes add chicken, tomatoes and spinach.
Sprinkle with Rosemary, Black Pepper, Salt.
Add Vinegar
Cook for 10 minutes, stirring frequently.
Stir Raw Honey in after you finish cooking.

Put frying pan on medium heat add Olive Oil
Add Brussels Sprouts, Cranberries and Walnuts
Stir frequently
Cook for about 8 Minutes
Add Cinnamon and Raw Honey
Stir
Remove after about 1 minute

Dairy Free Raspberry Oatmeal Pancakes

In the past when I made Oatmeal Pancakes, I would use Cottage Cheese, but a lot of people told me that they didn’t eat dairy.  I rarely have it anyway.  I started trying them without any Cottage Cheese and these are great.  

I also added Raspberries because of the way that they fight cancer and also fight fat.  After the recipe I have posted what you can expect from Raspberries.

Spicy Stuffed Bison Burger

I don’t eat a lot of red meat.  When I do it’s Grass-Fed.  I do eat Bison once or twice every week or two.  It is lower in fat and calories than ground turkey or chicken.  Anyone can make a burger that tastes better than McDonalds.  Come to think of it, I never did like the burgers from McDonalds.



Makes 3 Burgers
1 LB Ground Bison
1/3 Onion
1 Garlic Clove
1 Jalapeño
10 Cherry Tomatoes
1/2 teaspoon Ground Fennel Seed or Full Seeds
1/2 teaspoon Ground Black Pepper

Extra Virgin Olive Oil


Heat Frying pan on medium heat
Add a drop of Extra Virgin Olive Oil to Pan
Chop Onion, Garlic Clove, Jalapeno and Tomatoes
Place Bison in bowl and add all of the ingredients
Mix thoroughly
Make 3 patties.  Place in Pan.  Cook each side for 5 minutes or until you reach desired temperature

2 eggs
1 Carrot
1 Onion
3 jalapeño

1/2 teaspoon Black Pepper

1 large Tomatoes
1 tablespoon Balsamic Vinegar
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Raw Honey

Pre-heat oven to 350
Blend Walnuts and place in a bowl
Slice Carrot, Onion, Garlic and jalapeño
Tear up Basil
Add Eggs, Carrot, Onion, jalapeño, Basil, Garlic and Black Pepper to bowl and mix
Add Chicken and mix
Place mixture into a metal pan

Puree Tomato
Add Balsamic Vinegar, Olive Oil and Raw Honey
Mix and pour over the chicken meatloaf
Place in oven and cook for 40 minutes

Avocado Chocolate Coconut Pudding

I love guacamole, but I never thought that I would be eating avocado for dessert.

Try feeding it to someone who doesn’t like avocado and I bet they will tell you how good it tastes.
1 Avocado
4 Tablespoons Raw Honey
2 Tablespoons Raw Cacao
1/2 Cup Fresh Coconut
1/2 Teaspoon Cinnamon
1 Teaspoon Vanilla Extract

Place it all into a food processor and blend
Refrigerate for 20 minutes
